Chocolate Beetroot Cake

Every year my Dad grows tons of beetroot in the garden and we make everything beetroot for a couple of months (you name it soup, pasta purees). A chocolate beetroot cake has been on my radar for a while now and I thought now would be a better time than ever to test it out as a recipe and as a potential alternative to my signature chocolate cake.

You will need...

175g plain flour 
10g baking powder
75g cocoa powder
225g caster sugar
3 eggs
225g grated beetroot (once grated soften on the hob for about 15 mins)
200ml olive oil 

I have decided to make a cream cheese frosting. I love the contrasting flavour it gives to the sweet chocolate cake underneath. For the cream cheese frosting you will need

3 cups of icing sugar 
1tsp vanilla extract
130g ricotta cheese ( any cream cheese will do, I just happened to have ricotta leftover)
1/2 cup of butter

Preheat your oven to 180 degree/gas mark 6 and grease and line a 20cm cake tin. Next sift the flour, baking power, cocoa powder and sugar into a bowl. 

Soften your beetroot in a sauce pan for 10 minutes and pour your olive oil and three eggs into a mixing bowl. Once your beetroot mixture has cooled down then mix it in to the oil and eggs. 

Then combine the two mixtures. 

Then fold together the two mixtures in a figure of eight motion.

...until your mixture becomes silky and completely combined.

Then pour the mixture into your greased 20cm cake tin.

Blend the eggs, beetroot and corn oil in a blender until smooth. Fold the beetroot mixture into the dry ingredients, and then bake for 40 minutes.

Whilst your cake is baking and the kitchen is smelling divine, start to make your cream cheese frosting. put your 1/2 cup of butter into your mixer with 3 cups of icing sugar, 1tsp of vanilla extract and 1 cup of cream cheese into a mixing bowl and beat together until light and fluffy. 

Remove your cake from the oven and allow to cool. 

Make sure your cake really is cold before you ice it. Once room temperature smother your cake with your cream cheese frosting. You can top your cake with anything you like, I decided to make some chocolate shards to decorate mine. Its really easy, all you need to do it melt some chocolate and spread it out onto a baking sheet and allow to cool. 

Once cool, break up your chocolate into shards and decorate. An easy and simple way to make your cake feel extra special!
