Tangy Lemon Tart

Lemon Tart is a summer time favourite and with this sudden cooler chill in the air, I'm longing for summer and the sunshine so I thought what better way than bringing the sunshine into the kitchen with a tangy lemon tart. 

Its pretty easy and a dinner party favourite. 

You will need..

for the pastry,

120g plain flour
90g butter
45g caster sugar
1 egg yolk

for the filling,

4 egg yolks
4 eggs
Juice of 2 lemons
190g caster sugar
60g butter 

First you will need to make your pastry. Blend your flour, butter, sugar and egg yolk together in a mixer. Then you can either roll or prod your pastry into your tin. (I prefer the prod method). Then line your case with baking parchment and fill with baking beans (or rice) and bake for 10 minutes. 

Then take your baking beans (or rice) out of the part baked tart case and pierce with a fork all over..

Place you case back into the oven for a further 5 minutes until it looks golden..

While the pastry case is cooling get to work on your filling. Blend together the 4 egg yolks and 4 eggs in a saucepan with sugar, lemon juice and cook on a gentle until thick (for about 10 minutes) then add the butter, stir until melted and then pour into your pastry case. 

Once you have poured your mixture into its case then put it in the fridge for a couple of hours. Then before serving sprinkle with sugar and place under the grill until golden..

A little taste of summer.
