This is a favourite drink for the summer time. I really dislike the Italian stuff, a thick luminous shot with a unnatural lemony flavour. The commercial stuff to me really just doesn't taste that nice. I may have just been to the wrong restaurants or had the stuff out of season. Anyhow In greece each spring to summer the lemon trees are heavy with lemons which all smell divine. A couple of weeks ago my dad arrived back with a bag of lemons (and kumquats) in his suitcase and with the sunshine over the past few days I have been craving a refreshing evening drink and decided to set about making it at home.

To make two medium bottles you will need..

Juice and rind of 3 large lemons
12floz of vodka
4 oz caster sugar

Heat sugar and 5 tablespoons water, stir to dissolve, boil briskly for 3 to 4 minutes and until it looks syrupy. then allow to cool for about 15 minutes.

Next add the zest and juice while warm, but not too hot and add the alcohol. place in a bottle and leave in the fridge overnight.

Once left to sit in the fridge for 24 hours, strain the contents into a clean bottle and serve in frosted glasses to enjoy in the evening sunshine.
